I'd feel handicapped without having any of these things: air fryer, coffee maker, blender, toaster, microwave, scale, or stove/oven srs. That's why I pretty much always eat out if I go to a hotel.
What I've never had though is a mixer.
My kitchen is so tiny and cramped though, don't really care much, only feel like I'm missing out on convenience for making unhealthy chit like brownies. But NGL I would love to try some protein cheesecake recipes down the road. There's one I used to have bookmarked from the misc back in the day. Maybe whenever I get a house.i7-14700k

built in sous vide without having to get all the seperate parts out and use a standalone bowl/basin. would love to just have a water bath but also a way to seal the bags easier
makes cooking chicken etc 10000% easier srs. that's how indian restaurants do it they sous vide a load of chicken then pan fry it crisp it up or chop it up and soak it in sauce

I'm missing an electric mixer, which I really should invest in and make my own bread, my own rolls, and if I make a cake for some occasion too. I would like an espresso machine, but it's not a necessity, only a luxury.
What I definitely want, but don't have, is the vacuum machine plus a water bath for making sous vide steaks. Another miscer I talk to in discord turned me on to soud vid meat.
I also want to get a mandoline, it's like a horizontal vegetable slicer:

No air fryer - I'd actually like to try one of these someday.
Used to have a toaster oven, but got rid of it. Neat idea in theory, but anytime I was lazy enough to use it, I was lazy enough to go for the microwave.
Coffee pot - these things really do feel like a huge waste of space unless you're using them at least a few times a week.
Keurig - giant mess of an appliance, no desire to get one
