Yesterday my gf of 7 months was invited to her ex bf's birthday party that is happening tomorrow.
I am completely fine with that because I understand it is not easy or human to erase 3 year relationship from the surface in one snap of fingers. Before we became official, they had been together for 3 years (she's the loyal type) and they still remain in touch, but only as friends.
I am not insecure about her past and her ex's, because they have literally nothing on me. I consider myself to be quite a catch, all things considered.
When she told me about it yesterday, I asked her about the venue and the dress code because some of my clothes are still in the dry cleaning. She seemed to be surprised and kind of caught off guard as if she didn't expect me to go with her. Then she suggested that it would be better if she went alone or with her best friend if I don't trust her, which is not the case at all.
I'm wondering whether I should just let her go by herself to show that I trust her, or will it set a bad precedent for her future outings?

If her ex was really just a friend, and didn't have any ulterior motives, he'd insist or at least offer for her to bring you. So either he did and your gf just doesn't wanna tell you, or want you there (bad sign) or he didn't and they got some bad news for you bruh.
You guys have been together 7 months. if it was 3 months of less, or her ex is deeply involved with her family, it might be acceptable. IMO you should either

I must be the only person on the misc with an average IQ. If a girl wants to go to her ex boyfriends party without you it means instant break up. Because if you say no you can't go then she'd start doing stuff without telling you.

has to be a troll thread cool story bro.
If not, you mean your ex girlfriend. If she is dragging her feels along into your relationship, she is not ready for a new one. She needs to be able to let him go and clear him from her priorities. Flip the script, would she be okay with your going to hang out with your ex on her bday without her? I mean, some people are fine with this chit behavior and wonder why they can't keep a long stable relationship and/or their partners cheat on them.
