calories in vs calories out will always be true. Law of thermodynamics after all. The trick is that every calorie isn't created equal. Depending on when the cals enter your body they will do very different things. Food taken post workout will not go to fat stores, most of the time. Secondly, some food speed up your metabolism making them better than they appear (sometimes even less than zero!), others tend to be stored as muscle instead of fat, while others still tend to go towards fat stores.
Eating pure sugar will spike insulin making you catabolic, it's very likely to make you fat as it gets the carbs digested easily and your body cant' do anything else with it.
Now a pure protien would be very different. If it's PWO, your body can use the cals for protien synthesis. Even without it being PWO, your body will still use some of the protein for muscle repair. Secondly 40% of the calories will be burned up just so your body can use it as a fuel source. A carb conversion is much easier.
