I'm always told not to do a shoulder routine on its own day but I never get an explanation as to why.

Depends on what stage you're at. If you are big and strong with good shoulder strength and stability then it makes sense to target them if body image is your goal.
If you are a beginner you will most likely end up on the injured list because you overworked a complex joint that gets hit every single day. Think about doing anything in life that doesn't include the shoulder joint. The big push exercises are enough at this stage until one gets bullet proof shoulders (rotators, other soft tissue and scapular muscles/stabilizers)."Adapt and overcome."

Never say "never". If shoulders are a lagging body part, you have no shoulder issues, and you want to hit them hard, then do them on their own day if you want.
That said, I do them at the tail end of other days. They are a pretty small muscle group and if I was to dedicate a whole workout to them I'd either be done way too soon, or overwork them.
The reason you may have heard not to do them on their own day is because they do get hammered a lot during your other exercises, and many people have shoulder issues when they do too much.☠ By reading this post, you have agreed to my negative reputation terms of service.

There are several reasons why you might have heard not to do shoulders on its own day.
1) You may be a beginner and the shoulder joint is very sensitive, so if you lift heavy or do a lot of reps the joint will get fatigued... fatigue causes you to change your form and lift improperly... bad form during shoulder exercises are the fastest way to injury.
2) The shoulder joint is often used during other movements (i.e. all press and pull exercises) so the shoulder joint is activated already, so tacking a shoulder workout onto a chest or back day will suffice.
However, if you are an experienced lifter and are comfortable with a 5 or 6 day split then a shoulder only day is acceptable as long as you make sure to use perfect form and avoid compromising technique for lifting heavy.

I used to do a 3 day split in which i responded really well and everyone else looked at me like i was retarded OVERTRAINING etc etc.
Back bis and traps
Chest tris and shoulders
Legs
The one major thing i noticed when i do the 3 day is by the time i do shoulders, eventhough im not at my full potential, i've never had a problem with joint soreness afterwards.
But like said above, do what works for YOU...not someone else

I do shoulders and traps alone. usually at the end of my workout week. I tend to go lighter because of the abuse they take during the week (i acctually used to not train delts at all, but then got myself injured, and decided i needed it). It really isn't that bad to do them alone, the workout maybe a little shorter, but you could either throw in something completely unrelated like calves, or extra cardio or something if you feel the need to spend an exact amount of time in the gym.

i do shoulders and light legs on a day but try to space it from other shoulder stressing exercices like bench pressing etc. i often find doing the 2 too close causes extra unwanted strain and pain in the shoulders and just impairs my workout but do what your body tells you.. thats the best way to determine if what your doing is right
