I don't know if they're good for hill sprints, but the Richard T. Anderson Conservation area near Shakopee has a couple big hills.

Never actually been to the ski part, but I know the hills you're talking about.
If you can run up them, that's awesome. I've only been hiking through Hyland and when you get to the back area of the ski part they always have it blocked off so I've always assumed the whole thing was closed for the summer.
