the last few weeks ive been eating about 9 eggs per day, everyday, aswell as my carbs and protein etc..
are eggs a good source of muscle building protein?? would you reccomend me eating more or less of them??

Eggs are some of the best protein available
The cholestoral in eggs has been proven to be mainly HDL cholestoral, the GOOD cholestoral, so eat your heart out. I was eating about 12 eggs a day for a month a while ago while on accutane, and when I got my blood test it showed my cholesteral being lower than it was before.

This is false. GI is irrelevant for body comp in the first place. But beyond that, white bread is a complex carb and the only thing better about whole wheat is the minimal fiber. assuming you get fiber elsewhere then you can eat whatever. And if GI was relevant then you should check the GI of wheat...Nothin' special.
