When you do weights, do you get near failure at about 10 sets? A lot of women do 5 pound dumbbells for a long time and don't get to failure. Use heavier weights, and multi-joint movements. The more muscle groups used at once, the more calories you burn.
If you are eating 1200 and burning 1000, you would be gaining weight at about 2 pounds per month (1kg). Maybe faster if it is muscle. Try to eat 1200 and burn 1400. How tall are you? If you are 5'6", you want to eat more than 1200.

I would focus on lifting and significantly reduce your cardio. What your focus is should be based on your goals, but one way or another you should hit all of your major muscle groups once a week. I would suggest the Exercise forum for ideas. There are a lot of great lifting books out there, too.
If you ate enough you wouldnt need to eat every hour. Somewhere between 3-6 meals a day, whatever works for you.
