6 is my max and I used to eat it regularly.
I would get the peeled hardboiled eggs from Costco (four 6-packs) and then put them in a microwavable dish topped with salsa, cherry tomatoes and some cojita. Toss it in the microwave at work and get them warm and then slice them and put them in corn tortillas.
I eat eggs everyday and I think I have done so for the past 3 years.
My usual right now is deli meat, cherry tomatoes, mushrooms, arugula or spinach, salsa, cheese.

Dont quote me on this because I'm sure there is a lot of broscience surrounding this, but I heard that after consistently eating a high amount of eggs daily your body starts to reject them. I also heard that if you stop eating eggs for a long period, your body reverts back to normal.
Sorta wondering if this is true now. Anyone have any knowledge on this?I rep back all

No, if you disagree then you're disagreeing with the French.
Some ideas for eggs:
Chatchouka:
Some peppers (green is IMO far and away the least tasty colour for this dish), chopped
Some tomato, chopped (both fresh and canned taste good)
Some garlic, finely sliced
Some onion, chopped
Some spices (turmeric, paprika - smoked or sunsmoked; both are nice - cumin, cayenne... all of these are especially good whether on their own or partnered with other spices, but feel free to experiment. Take note though that you don't want to overdo them)
Some olive oil (I think quite a generous amount of this is best for this dish)
Some eggs (you'll probably want to decide on how many after preparing the vegetables, as that will give you an idea of what the ratio of egg to veg is gonna be)
Some chopped parsley to scatter over at the end if you can be bothered
Throw the olive oil in the pan over a medium heat, and when the pan is warm add the peppers, onion and spices. Let them cook (stirring occasionally to prevent sticking) for as long as you can wait, but really you should leave them until the peppers are soft and both vegetables have taken on a bit of colour. When you think the vegetables are ready, throw in the tomatoes and garlic and whack up the heat until the tomatoes have reduced a bit. When the mixture looks tasty crack in the eggs, one by one, and when they are all in leave them to cook to your liking (eg. runny or set). Turn the whole thing out onto a plate and scatter with the parsley, if using. Voila!
