When you baked chicken quarters , thighs etc any fatty bird the juices in the bake pan are massive in amount .
You save it for soup , keto resourcefullness mixing in seasonings n such , or for as a broth when makin rice on a typical 40/30/20 to include some REAL fat flavor ..
but When refridgerating it it is no longer liquid it is half gellatonous & half solid lard akin to butter ..
so -->> what is the composition of it specifically the jello'y portion that sits at the bottom
(assuming here that the solid top half is THE fat)

Well the bit that becomes jelly when refrigerated is the chicken bone marrow, so perhaps you could use that to hone your search in google? Sorry if you already knew this but I didn't see it in your OP.

I've known since I was very young cooking with my annoying Italian family. I think I was making chicken pasta with my grandma and had to ring her up and ask her why it was 'jiggly' when I took it out of the fridge to heat up leftovers.[/lifestory]
Not the most reliable of sources but it's matching up with stuff on the net - it seems everyone is agreeing it's very high in monounsaturated fats and vitamins/minerals.
