Unless there is some breed of oval log-shaped turkey out there that I'm not aware of, yes, the turkey you get at the grocery deli or in packages is processed as ****. Does it have the grainlines like real meat? No. Is there more than "turkey" listed on the ingredients? Yes.

My grocery store makes their own brand called Honeysuckle. It's not processed at all and has low salt and no sugar...
Ask the people at the deli which lunch meat is the least processed.Will rep back 250+

Boars Head Cracked Pepper Turkey is good stuff, I'm sure it's loaded with preservatives though. . . but . . . can't resist
