I've lifted consistently and seriously(meaning straight working out 6 days a week, no Instagram bull****, no 5 minute rest bull****, my rests are strictly timed 30 seconds-2 minutes) for 8 years now.
I feel like my gains have started to become so slow, just working on getting shredded now.
The only things I'm really working on is my glutes and my arms because I feel they are lagging hard.
Would it be okay to half-ass the rest of my exercises, but still keep the intensity up, to maintain muscle? Honestly don't enjoy the gym that much anymore as well, feels like a chore. But for my stress it's the only thing that helps.
This is what I ideally would just do:
For chest I just incline DB bench.
Shoulders, lateral raises, military press, dumbbell press.
Arms, bicep curls, hammer curls, tricep pullsdowns.
For back, weighted pullups and barbell row.
Legs, pin squats, glute raises, reardeadlift.
Does that seem alright?

If you're in the advanced stage of lifting where gains are going to be minimal you can try doing specialized routines, which is basically what you are referring to.
A specialized routine is when you focus on 1-2 different body parts adding extra volume and frequency while putting the rest of the muscle groups on maintenance volume.
Do this for 6-8 weeks then swap out the muscle group for different ones.

Time to find a new hobby then!
I'm not there yet as I am still gaining strength slowly, but anything except maintenance/extremely slow bulking just adds a pile of fat at this point.
When gains are getting so slow that you basically notice no difference in 1-2 years despite training hard I hope I have it in me to say "well, time to move on" and just transition to a basic maintenance routine lolThe first principle is that you must not fool yourself—and you are the easiest person to fool.
