OP, sounds like you may have seemed overeager but you haven’t officially shot yourself in the foot yet. You’re still in it but you need to assert yourself as a high value man.

"I Will Not Be Outworked. Period. You might have more talent than me, you might be smarter than me, you might be sexier than me, you might be all of those things. You got it on me in nine categories. But, if we get on the treadmill together, there's two things: You're getting of first, or I'm gonna die. It's really that simple."- Will Smith

This may seem like a minor detail but I used to respond exactly like you did and then hit her up a few days later. It was usually not successful.
Now in a scenario like that I would respond with "All good. Let me know when you'd like to reschedule."
This leaves the ball firmly in her court and leaves the impression/assumption that she's going to reschedule because you view yourself as someone of high value so after a few days she will reach back out.
I used to be afraid to leave the ball firmly in their court in fear of them ghosting but told myself that waiting a few days before hitting her up again was my way of at least not looking needy. Now I know that subtle change increases your value in their eyes because you see yourself as high value and don't need to chase them.
& in the case they don't ever get back to you then I can assure you that your chances were slim to none in the first place.
The reality of the scenario is it was just one date and you neither hooked her or completely blew it and as much as you feel she's "genuine" and you had an awesome date, you are very much in the stage where you have to play your cards right and there's some small and easy things you can do to do so.
One other tip, don't say "I'd love to take you out."
You're wording it as though she's the prize and you're trying to win her over.
