If you want to build muscle you have to maintain your macros which include protein consumption. Thoes macros can be met with whole foods or adding in a high quality protein shake like Iforce Nutrtion Protean. At the end of the day it doesnt really matter as long as you are hitting your needs for the day. This will vary from person to person depending on your goals. As far as DOMS are concerned they are not a clear indication of a "good" workout. That being said, your workout plan needs some serious help. You don't train legs. You literally missing out on half of your body. Follow the links below and learn about your nutritonal needs.

Your body isn't sore immediately following a workout. That's not how it works.
As long as you have your diet figured out, make sure you're hitting your protein macros and overall calorie intake daily and you should be fine. If you aren't sore, it means your recovery is on point OR you don't work out hard enough.Progressive overload + progressive eating = gains. Simple as that!
