Good for you OP. Fine dining is definitely a passion of mine, though I'm more interested in street food all around the world atm.
In other news, I took my gf out for $300 dinner couple of weeks ago but only liked 1 out of 7 courses.
My wallet was not happy.
Been living like a monk ever since to recover the cost.

Restaurant name sounds familiar. I probably went there before. Wife gets the AAA restaurant 5-star list every year. She on a mission to go to all of them. Out of all the ones I've been to, I would say only about 25% of the restaurants deserve the 5-stars IMO. Some have really good food though, can tell when super fresh food and great flavor, and not too salty. I don't care much for the presentation and service, I'm mostly about how the food tastes and I should be full at the end.
I never get the wine pairing, adds lot to the bill. And I try not to look at the bill.

Clearness/greasiness/texture can be wildly different and does alter the experience a lot (even more so with a fat-as-phuck beast like duck). Choice of parts, roasting of bony parts, imparts different flavors. Careful choice of vegetables and seasonings can make the final result more layered.
Repped OP fine dining is GOAT, even more so if you work in the industry. BTW do high-end restaurants in the US have "introductory" menus at lower prices ? I live in France and I can legit dine in 2 to 3-star Michelin restaurants here for 100$-200$ per person if I pick the right days/menus and that really helped me get into fine food.Last edited by DancerInTheDark; 02-07-2016 at 12:17 PM.
