So any of you experts, I have an arc witch and have a ton of trouble staying alive.

My resist are nearly all at 75
Health 2.1k
AA @ level 13 or 14
Armor and Evasion is pretty low

I am level 73

I use arc on bloodlines, currently lvl 80.

Your problem is low health pool and you need to get AA higher. Other than lvl 17 AA I have no defences (cloak coming soon hopefully tho), but that combined with 4k hp is enough to keep me alive.

However, if you don't have seething life flasks that could be a big missing piece.

Mmm well my health is actually 2.5k. I also use cast when damage taken along with the skill that gives invulnerability for a short time. Leveling my AA now but I need EB and sustain it, im a few nodes from it. Also need more mana regen for AA. I dont use any granite flask, not even sure what those do lol. My *** is around 6k with Arc and 10k with Tendrils. Also use Vaal Storm Call

You definitely focused way more on damage than survivability.

Granite flasks add extra armor. I think you should do the side quests that give you respec points now and take off a few damage nodes and get EB and more life. I'm at 2.5k life and lv13 AA at level 60 and I probably had EB since level 50. Once you get EB, and level up AA a few more times, it will be a huge boost defensively. You can also link life leech to your arc for now.

77 spell dmg, 87 spell crit, 21 cast speed with some mana. The only reason I got it was cause of the max cast speed but I'm kinda having buyer's regret :/

That's just confirmation bias, from bunch of dudes putting a lot of time in. It takes like 200 Baal runs to find anything of scant value; more than 5-8 of them a day is inhumane to a human brain. Most botted genre for a reason.

Since you're on SC you have a couple more options too. Midnight bargain wand gives you another spectre and zombie and reserves 30% of your life for low life builds. Think it's around 1ex on softcore though so and end game purchase if you don't have the funds yet. And vis Mortis robes gives anther spectre but that's like 4-6ex on HC, dunno about sc.

My builds are focused on survivability over d.p.s but will talk in game and go off what you prefer.

I'm 85 now but I've only been running like lvl 70-71 maps, the exp is slowing down a lot. I need to get into higher lvl maps, with today's carto I finally got a decent pool of 72's that I'm gonna be breaking into soon.
