    Almond loaf?

    Hey.

    I mixed up a recipe intended to make almond pancakes, that you can substitute as bread for small burgers or sandwiches. I only have a poundcake tin, so its like a small loaf (about a inch high). Its great, but was wondering how to make it bigger. I guess this is a baking question rather then a keto recipe one

    Ingredients are;


    ¾ Almond Flour (I used almond meal)
    2 Large Eggs
    5 Tbsp Unsalted Butter
    1.5 tsp Splenda (optional)
    1.5 tsp Baking Powder

    Would it be as simple as throwing in more ingredients? Would more baking powder make it raise more?

    On the actual food itself, its good. A bit salty. I only used a bit of Splenda (I would of got stevia if they had it). and used a good bit of butter. It was amazing with some scrambled eggs. It breaks very easy in your mouth but very stable to spread on.

    Anyway, after copying and pasting the ingredients, I can actually see the amount of flour needed, and I used a little less, lol.

    The finer the almonds the more they will rise so almond flour over almond meal will work better. Also, you could use baking soda in addition to baking powder. I find the combination of the two work well. Lastly, you could separate the eggs and whip the egg whites until fluffy. Mix all the other ingredients together in a separate bowl and then fold them into the egg whites carefully so you don't deflate them. If you do all 3 of these things, the bread should rise better than it currently does.

    I have about 400g of almond meal left. No-where here (Ireland) stock almond flour. I phoned around a few health shops and they tell me its too expensive, no-one buys it. I can get 400g bag from e-bay for around €25, which is very expensive. Anyone in Ireland know where I can get some let me know!

    I will take the advice and come back if It improves. Its really nice as it is, if I can get it to raise a little it will last a good bit longer after I make a proper loaf.

    Put the almond meal or even just some blanched almonds in a food processor maybe? Going to try this hopefully tonight
