Didnt use any of the veggies either
I used
1lb lean beef
1lb country style sausage
chopped onions
pepper and salt
Italian seasonings
3/4 cup of Parmesan Cheese
4 Slices of Swiss Cheese
Honestly it looks like snotted on something but trust its sooooo yum!!!
(Mine should be close...swiss cheese didnt have any carbs on the package so not sure how much it will modify)
Makes 6 servings
Freezing not recommended
Per Serving: 586 Calories; 44g Fat; 36g Protein; 8g Carbohydrate; 2g Dietary Fiber; 6g Net Carbs

Saut? the mushrooms, peppers and onion in olive oil until tender. Meanwhile, reheat the meatballs, if necessary. Divide the meatballs and vegetable mixture between 6 individual casserole dishes. Top each with 2 tablespoons pasta sauce, then 1 ounce mozzarella. Microwave about 2 minutes on MEDIUM power or bake about 10 -15 minutes at 350? until hot and bubbly and the cheese is melted.
