I read that the body can only digest about 20-40 grams at a time. Is this honestly true?

There is no set number.
Yup.
Forget the studies. Pick a point to start from and go from there. At your age/wieght/size, begin with 1.25-1.5 and go from there. However, I take in 2-2.5 depending on my goals.
Do not forget the carbs and fats either. Put down the muscle magazines also and listen to some of the others here.

I already shoot for 1.5-2. I can get to 200-300g a day if I eat a lot.
I was drinking a protein shake with skim milk and 24g whey 24g casein, so 48g gram + 8-16grams from the milk.
Then I heard a shake with water immediately after is much better for faster absorption.
I guess what I'm really asking is, should I mix with water, or is the milk option better for more protein?.:: Misc Cologne Crew ::.

300 g of protein per day may be excessive, but 200 - 250 g is fine.
You don't necessarily need to opt for water in your post-workout shake. Assuming that you're drinking enough water, anyway, milk would be a good choice. It provides protein, as you said, as well as other beneficial nutrients.Nutrition and Supp Science FAQ:

The body can only absorb so much and there is a limit to which protein can be synthesized. Just ask your kidneys, liver, and stomach. I would say two men with the same percentage of body fat weighing the same, but one guy is 6'4 and the other guy is 5'6 will probably digest protein at a different rate. I would assume the taller male would have a higher ability to digest more protein.
As for the 40-60 grams of protein an hour? I would highly doubt that.
