Approx. 2 Cups Oatmeal Flour
Approx. 4 Tablespoons Flax Seed Meal
Approx. 1-1.5 cups egg beaters or egg whites
Add milk or water for desired thickness or size
Syrup optional, but I will enjoy these with a nice tall glass of ice cold low-fat milk.
Serves 2-3
Cook these like you would with any other pancake. Just after dropping about 1/3 to 1/2 cup of batter into pan sprinkle about 6-10 blueberries on each pancake. I use Pam spray in a stainless steel pan, but you can also use a non-stick pan as well. Don't use too much heat they will scorch easily. It usually takes 2-3 minutes per cake. You don't have to use these exact measurements. Sometimes adding a lot of egg whites makes them rubbery. Go head and experiment. Enjoy.
