½cup softened butter
1¼cups sugar
2eggs
1teaspoon vanilla extract
2cups flour
½teaspoon salt
2teaspoons baking powder
½cup milk
2cups blueberries, washed, drained and picked over
3teaspoons sugar
Step 1
Preheat the oven to 375.
Step 2
Cream the butter and sugar until light.
Step 3
Add the eggs, one at a time, beating well after each addition. Add vanilla.
Step 4
Sift together the flour, salt and baking powder, and add to the creamed mixture alternately with the milk.
Step 5
Crush ½ cup blueberries with a fork, and mix into the batter. Fold in the remaining whole berries.
Step 6
Line a 12 cup standard muffin tin with cupcake liners, and fill with batter. Sprinkle the 3 teaspoons sugar over the tops of the muffins, and bake at 375 degrees for about 30-35 minutes
Step 7
Remove muffins from tin and cool at least 30 minutes. Store, uncovered, or the muffins will be too moist the second day, if they last that long.

Man, I haven't seen TommyRO in ages - hope he's well. I think FarmersSon is still around, no?
It's a mutually motivating thing, really. For Mother's Day I made a treat for my wife, this zucchini/gruyere pizza, and another with tomato/olive/ricotta. Would've posted them in that era, srs. Now I just post junk food binges every once in a while, lol.

This is one I made a while back. You basically shred lots of zucchini, salt it - let it sit - then squeeze all the water out. Mix that with grated gruyere and spread on the dough. Sprinkle with some breadcrumbs to absorb moisture and there you go. It's super easy, super tasty. My 9 month old girl was going berserk for the topping seriously lol.
