I know the yolk is the most nutritious part but it is the hardest to eat. On college campus, so it is the only way I can eat eggs. Can't scramble or anything else. So far I have just been stabbing the egg and eating it with a fork. Is easier to mash everything up? What kind of sauces do you put on it?

I have the same problem as OP, that's why I only make an omelette out of them.
Can't eat them boiled.
I once threw up.*Go to the bathroom, flex in mirror and forget to pee crew*
*Shave one of my legs and pretend it's a girl in my bed crew*

If you need easy-to-peel eggs and you have fresh eggs, you might want to try steaming the eggs for 20 minutes. Somehow the steam penetrates the shell a bit making the eggs easier to peel. If you've boiled a batch of eggs that you are now finding difficult to peel, try cracking the shells all around without peeling them and soaking the eggs in water for a while. The water often seems to seep in enough under the shell to make the egg easier to peel.

Ever try pickled eggs? Hard boiled eggs soaked in vinegar and other spices. Purple ones add beet juice. Yellow add ground mustard. I've taken a jar of the leftover jalapeno juice and put 4-6 hard boiled eggs (out of the shell) into the juice. Let it sit for a few days, and you've got spicy pickled eggs. You can actually re-use the juice 3-4 times before you should start a new jar.

I don't do this now, because it is more calories/carbs than I currently want, but I used to LOVE this wrap for breakfast:
-Joseph's Lavash flatbread
-boiled eggs (remove as many yolks as you wish)
-baby spinach leaves
-hot sauce
Slice the boiled eggs and spread on lavash. Cover with spinach, sprinkle with hot sauce as desired. Roll up. Eat and enjoy.

Make an omelette! Throw in some peppers, mushrooms, sweetcorn, onions, tomatoes...whatever you like.
Or if you want sweet instead of savoury mash a banana (really mush it up), mix with eggs, pinch of cinnamon and make it how you would an omelette. I spread peanut butter on the finished product it's delicious!
