I cooked the other half of that top round last night. Slicing it straight up and down as opposed to on a bias made it more tender.

I've wanted a stick burner for years. The manual aspect of managing the fire, choosing & splitting the wood, getting that thin blue smoke, the completely indirect heat application - all of that makes me want one. What holds me back personally is what ive read about the importance of thick steel. Yoder's use 1/4" (3 Gauge) & 3/16" (7 Gauge) steel which is substantially more robust than your "civilian" class smokers which usually run around 14 Gauge.
