and im overdue to contribute a little here.. baby backs fresh off the Memphis Pellet grill. 3/2/1 @ 225 - nothing out of the ordinary but it was a really good eating rack. I did sauce em up with The Shed bbq sauce. thefugitive dialed me in that stuff a few years ago and it's still my favorite

I cooked the other half of that top round last night. Slicing it straight up and down as opposed to on a bias made it more tender.

I havent really been doing anything super exciting on the grill lately because of it being summer here but gonna be posting again ITT fairly soon as the weather is perfect for grilling and smokingMinisterOfLust: scooterbrah and Mcfreoko are the two worst posters here.

Gonna smoke up some pork belly tomorrow (I always cut them up into little 1 inch squares and candy them with honey and butter).

I've wanted a stick burner for years. The manual aspect of managing the fire, choosing & splitting the wood, getting that thin blue smoke, the completely indirect heat application - all of that makes me want one. What holds me back personally is what ive read about the importance of thick steel. Yoder's use 1/4" (3 Gauge) & 3/16" (7 Gauge) steel which is substantially more robust than your "civilian" class smokers which usually run around 14 Gauge. That thermal mass of the big boy smokers keeps things steady.
That said, Oklahoma Joe is well known brand for offset smokers. If you are patient & keep an eye on the classified ads you might be able to find a gently used one that is old & made with thicker steel. These are the type of items guys buy with big plans of using & they just collect dust in the backyard after 1 or 2 BBQ's. You could probably find one thats nearly new for a steal.bmbc

Yeah, basically all of what you said makes me want one. I have access to a Yoder dealer, but the closest place I could go see the Old Country is a 6 hour drive. Makes me nervous ordering one without being able to inspect it, but idk. What I like about those models is that the fireboxes are welded and not bolted together and also the fireboxes are welded to the cooking chamber instead of being bolted. Also, the thicker steel is nice and the exhaust opening up down near grate level seems nice. I will also probably do what you suggested and check on something like OK Joe's or whatever from Craigslist.

Yeah, I'm in and out...
Traditionally I'm a charcoal guy, but when I was in the middle days of my divorce I was using my buddy's propane grill, and I liked the convenience. What I'd really like is a grill that runs primarily on charcoal BUT has an infrared back burner that could work with a rotisserie!6'4"
