So this is kinda weird...I have (rather had) a jar of natural PB (Kirkland brand from CostCo), I had been storing it upside down in my fridge, no problems for a while, then once I had used up all the PB that had collected at the top of the jar, I got to the stuff at the bottom, and it was all dried out and impossible to spread. It tasted fine, but the texture was sort of like peanut butter that had passed expiration, which this clearly did not (only like a month in the fridge, expiration date is August).
What happened to my PB??
Did the oil all seep out of the stuff on the bottom (or top when it was flipped) ?

I dont have an answer...but this happens to my natty pb too, cept I dont turn it upside down. when this happens, i throw mine out, cuz the texture is too funky. anyhoo, hope to see better answer then mine

The oil in peanut butter made without stabilizers naturally goes to the top of the container. If you don't stir it, the bottom will have a lesser oil content (or be "dry") and the upper portion will have higher oil content.

Yep, that's just separation at its worst. I often get sections that are separated so bad it's hard to get the oil in them. You have to chop at them for a while to get it all in. It's odd that this happened on the bottom of the jar while it was upside down. I would have thought the lid would have had the hard stuff.
Unless of course, this happened before you bought it and put it in the fridge.
