Would it be better for me to buy the trainer or the number 1?

Don't bother with the trainer. You are just wasting your 20$ there. Get a number one to begin with. I closed it relatively easily after a short warmup and have never trained grip before specifically. You are probably right, having a number 1 and number 2 is the best bet.
Some people can close a number 2 first try. Not many can close a number 3 though first time! Our kind has never been seen before.
And when the last of us are gone,
We will never be seen again.
Because there is a secret behind our creation,
And secrets like this only come around once.

The department store grippers like Spaldings, Wilson, and that kind of stuff generally take 40-50 pounds of pressure to close.
The COC grippers are much harder:
trainer - 100 lbs.
#1 - 140 lbs.
#2 - 195 lbs.
#3 - 280 lbs.
#4 - 365 lbs.
2 grippers of the same number can vary slightly in difficulty despite the numbers above being their "official" rating from Ironmind.
