you just dont get it - dissecting the organs , blood analysis is harder proof of an effect rather than trying to attempt statistical tests on humans when there are so many control factors - the studies are done from birth to death of the animal.. a randomized control cannot account for former habits of the subject where they might have change their life recently

You cannot directly compare these types of studies of rats to humans. It only works if you know that your treatment will have a similar effect in rats as in humans. Are rats known to be a good model in studying trans-fats compared to humans? Very unlikely since the effects of trans-fats is so widespread throughout the organism. You cannot get better than tests in humans. The variation between humans is taken into account by having large sample sizes and by reproducing the results through numerous studies performed by different researchers. As the evidence accumulates it becomes more and more certain.
Not only that but since rats develop quite differently than humans it is not a tremendous benefit to see how trans fats affects rat development in the absence of human studies. Animal studies do matter but the strength of evidence they provide is not stronger than human studies but it does allow us to speculate and develop better human studies based on what we suspect will be the result in humans.
Edit: The fact is you cannot even be certain when comparing rats to mice since there are unexpected differences between the two unless you know the model holds. Sometimes we assume the results will be the same but you would be surprised how different the two really are.
