you can grow back by width or thickness and there's a ton of exercises for either goals. some popular ones are:

    Width: pull-ups, lat pull downs

Thickness: bent over rows, seated cable rows, single-arm dumbbell rows

Dead lifts in my opinion are one of the best back workouts you can do. There's a lot of variety of workouts to choose from though. Bent over rows, lat pulldowns, T-bar pulls, chin up bar, dumbbell exercises and a lot more.

As an alternate to DL -- rack/pin pulls.
Bodybuilding is 60% training and 50% diet. Yes that adds up to 110%, because that's what you should be giving it. Change the inside, and the physique will follow.

    Mix & Match:

    Pull up variant
    Row Variant
    Deadlift variant

Voila, you have just hit your back. Keep width and thickness (vertical and horizontal pull) exercises relatively even when designing the workout.
