this was an extract. very basic
Im looking at Wheat yeasts right now, some belgian witbiers yeasts and some hard cider recipes
anyone use liquid yeast before?

That looks like my first brew. It's definitely looks under-carbed. How much sugar did you add to each bottle, or the batch pre-bottling? And when I bottled, I filled to within 2" of the top of the bottle, and let them sit for at least 2 weeks at around 70 degrees. If you don't have a bottle wand, get one. It allows you to fill the bottle all the way, and then when you remove the wand, the displacement automatically leaves the perfect volume in the bottle. Remember, if that's a pint glass and you're pouring from a 12oz bottle, it will always look low.
Also, I use liquid yeast 99% of the time. I prefer White Labs over Wyeast, just easier to work with, plus I keep the empty vial from each yeast strain I use. I always make a 3qt starter too, a few days before I brew.

thanks for the info!
i followed the directions in terms of sugar. i added 2.5 teaspons exact measurement to each bottle as it called for. its sat for a total of 7 days at 70 degrees then I took half the bottles and put them in fridge and left the other half ( 4 and 4) in the dark in 70 degrees
great info about the wand. I will get one because filling the bottles i was concerned with overfilling so a few got left short but 1/2 inch in some places

I generally say support your LHBS(Local Home Brew Shop), but mine isn't very cheap. So I usually go through Austin Homebrew. Flat rate shipping, awesome customer service, and a good product selection. For bottling, I'd suggest using a bottling bucket instead. You take a sanitized bucket, add 2 cups water boiled with 3/4 cup corn sugar dissolved. That will cool within a few minutes. Then add the uncarbed beer. A few stirs while it's filling and that will get the sugar mixed evenly. Then just fill each bottle. You'll have the right amount of sugar in each, and it's just a simple rinse out to clean up. You'll need a siphon and bottle wand, but you can get all three for under $35, and it's well worth the money....i remain, he who remains to be...

Winter Jubilee 2011
Another great beer fest! Kind of sucked standing in the 15 degree weather waiting for the doors, but we were the 2nd and 3rd person in line. 63 brewers, each at least 2-3 brews. The standards were all there, and I found a few new beers that were pretty good.
Blue Hills Brewery, Canton, MA - Their Black Hops Beer is awesome! It's got a grain bill like a Schwarzbier, , but it's an ale with about 50 IBUs by my guess, and 6.75%abv. Great balance and hop flavors. SRM about 25-30. *--They also had a DunkelWeizen, which was also very good. Not too wheaty, not too dark/thick. Just right, and the guy serving was really cool, definitely enjoyed talking about his beers.
Wormtown Brewery, Worcester, MA - Seven Hills Pale Ale, 30 IBUs, 4.5%abv - Another great session brew. I could drink these all Summer long. One of those kind of beers. *- I also tried their Be Hoppy IPA, 69 IBUs. Not bad, pretty strong hop aroma. Good bitterness, a bit on the thin side though.
Other than that, I can't recall too many other that really stuck out. I tried a bunch as usual, and frequented my favorites. Next beer fest is Beer Summit, sometime mid-April.

sup brahs, I am still buzzin, and I started drinking at 10 pm(whilst playing starcraft 2). Went the high protein route today and drank as much as I wanted.
overall pretty good stuff, a bit strong on the alcohol(in the taste)
delicious and definitely better than the original
this is excellent, yes it is really sweet, but i couldnt stop sipping on it and then it was gone.
then the finishing off some others in the fridge:
I meant to grab a Christmas ale, but my drunk ass grabbed the last Holy Moses, it is still great
also grabbed the last Guinness, so good

You will never find it in Ohio, 18% ABV and the ohio cap is 12%. Go to Indiana, I got it in Fort Wayne
somewhat citrusy but it was realllllly sweet tasting, I probably would have liked it better if it was really bitter, but it was still great, and tasty. Just go ahead and try the Guinness FES and tell me how it is, I enjoy it a good amount.[IIFYM]

Ommegang Cup O' Kyndness is a Belgian style Scottish Ale. Good brew for the style. Nice and malty up front with bare hint of hop balance. Would drink again. I've had better Wee Heavy's but this is a good brew.
Finished off with St. Arnolds Stout. Probably the best beer they brew but not my cup of tea for a stout. Very thin with light dark roasted malt and very little hops.Official Supp. Misc Beer Crew

Sucks. Needs to be aged 3-5 years fo sho. TOOOO sweet.
Fill it up to the top; when you remove your racking cane there, should be about an inch left in the neck which is perfect for fermentation.
three disappoints:
#1: you gotta let 120 age. Do you not listen to IceT?
#2: Guinness? GTFO
#3: You failed on missing xmas jale? At least you landed probably their fourth or fifth best brew.... holy moses is still the shyt, regardless.
