...Why exactly do you store fat once you come of a low carb diet? If the macros are still under maintenance and you eat low fat...why would the carbs be stored as fat?
Everyone keeps saying you need to reintroduce carbs slowly.

I haven't heard much about storing fat - but I'm sure that you'll gain back some water weight.

You don't store fat when you come off keto. You do gain back a few pounds of water weight but it will probably make you look better, so not a problem.
The trouble is if you use keto as a crash diet, cut out all the carbs, get to your target weight, then celebrate with a cake-and-cookie fest. You'll gain then for sure.
A typical BB-er who comes off a 2500 cal keto diet and goes onto a 2500 cal 40/40/20 will not gain anything except water.
The Atkins diet is constructed so that you gradually reintroduce more carbs as you get closer to maintenance. The idea is that you ease into a diet that you can live with for life.65% fat, 30% protein, 5% carbs = keto.
