    Corn: the underrated vegetable

    I grew up eating corn and since I have started to eat healthy I shunned corn thinking it was a non nutritious vegetable used to make animals fat. I dont think corn is very popular with the health food community and I dont see it on most peoples diet plans. Been doing a little reading and it seems like in the case of potatoes corn may not be as bad as once thought.

    Corn is still a vegetable, its just a high starch vegetable... good source of complex carbs and vit. C

    I absolutely love corn, on the cob, corn bread, corn fritters, corn casserole... but it is very calorie dense. For that reason, I tend to shy away and choose other grains and veggies.
