This recipe save my life when I need a quick but tasty lunch for the job!
You need:
- 2 cans tuna (or salmon)
- 2 eggs
- 2 oz cheddar ( I use Cracker Barrel extra old! )
- 1/4 cup chopped celery
- Dry onion, garlic powder, salt, pepper... Anything you want Or more cheese!
- Preheat at 350 F.
- Mix the ingredients and poor into a 6 muffins pan. (I use muffins papers to save time!)
- Bake for 25-30 minutes.
Make 6 "muffins" :
103 cal, 14g prot, 0,3 g carbs, 4.6 g fat / muffin!

You can also just take this mixture and directly fry it in a skillet with some pam or butter or whatever your diet allows. It's a LOT faster than baking it. We call these "Tuna Cakes" in CO. Fry till brown, flip it and fry some more, done when a fork comes out clean.
I do usually use 1 large can of tuna per 1 egg, also can skip the cheese if your don;t need the fat calories.
