How fast does it take to rebuild muscle with muscle memory. I have read mixed messages on this and wasn't sure?

Not sure if serious or not, but I've worked out my whole life, save the two-year period of time around late 2007-2009 when my 80 employee mortgage company crashed, gym closed, relationship ended, etc. Was a series of things. Anyways, got back in the gym around 2010 when I saw the Jersey Shore crew and remembered that I used to have that physique.

Started working out and eating and in six months time had 90% of my strength back, but weighed 280lbs, so then spent the next 5 years slowly losing fat to get my physique to a solid 240lbs.
