Hmm that’s odd. I’ve been to tons of sushi places all along the west coast and NYC etc and they always have spicy mayo in spicy tuna rolls. I also know a couple of sushi chefs here in So Cal. Sometimes not mixed into the tuna, but rather slathered onto the rice before the tuna is added and rolled. So yeah the tuna itself is still red.

Ironically When I was in Asia I rarely saw people eat sushi. They were usually eating weird things I was too scared to try. I would sometimes look for a McDs to eat some comfort food. Couldn’t always do that for work dinners though. My Paris coworkers would try to get me to eat weird stuff too but at least it was usually cooked.

Heck no. Where I live there are a lot of Philipino families. Some of them eat blaut and try to get me to eat it. No way. I will eat pancit all day, and lumpia, and a lot of the other stuff they have for parties, #neverbalut one of my favorites is the little coconut roll desert things, I forget the name.
