    I would almost just crust that bad boy with minced garlic, horseradish, kosher salt, an aggressive amount of black pepper, fresh thyme and a little worchestershire (Just to hold it together)

    Let it sit out on the counter (covered) for 45 minutes to allow the meat to bench rest for even doneness in cooking.

    Place it in a roasting pan in a 225 degree oven until you get an internal temp of 125 to 130.

    Then bring the oven up to 400 and finish it for 10-15 minutes or an internal temp of 135.

    This is basically how you do a beef prime rib or a chateau briand.

    The two roasting temps will give you a juicy medium rare interior with a flavorful browned crust.

    Since it's a loin and not a T-Loin, you'll want to slice it a half inch thick (No more).

    Best with Garlic mashed potatoes and olive oil broiled asparagus dressed in sea salt. (Or sauteed mushrooms)

    Collect any drippings to make a spicy Elk gravy... Deglaze the roasting pan with half a cup of red wine and half a cup of heavy cream. Add ground pepper corns and then follow standard gravy procedures.

    For a wine, you'd have a hard time doing better than a Cabrenet Savignon!

    Marinade it for AT LEAST 24 HOURS before you make it, use plenty of salt and like Nainoa said, leave it out for 45 mins to absorb the goodness. Another tidbit I'll pass on is NEVER, EVER use garlic in the marinade for jerky, you'll only do that once, lol. FUUUUUUUUUUUUUUUUUUUUUUUUU!

    OK, I have a question for you northern tier folks. Do people up there panic like they do here and hoard bread, milk and toilet paper? There wasn't a loaf of bread to be found or gallon of milk. I don't buy milk, but god damn people.

    Naw, it's usually not too bad. If anything, the beer coolers get emptied first. We are used to storms so we generally prepare better.

    Went and talked to Dad's neighbor to get a hunting plan going for next Saturday. We were driving around his property and he was showing me the blinds, and we saw 7 deer right then. they weren't too scared, either. Excellent...

    Well most of us are smart enough to have stocks at home for emergencies. The world could shut down right now and I'd still have food and toilet paper to last 3+ months without rationing.

    I'm a little in the extreme. But in general when you live somewhere that calls for you to tough through 4 extreme seasons you're always prepared!

    Wow, the elk jerky turned out awesome. Oddly enough, the beef I also did turned out way saltier. Same seasoning and cure mix for both. Maybe the fattier beef absorbs more salt?

    Either way, I am very pleased with my jerky making abilities. I am addicted.

    Had a good long day on the water Saturday. Fished the inter-coastal for a few hours and it was kinda slow so we decided to go to the mouth of the river on the 17' skiff. It was only possible since the seas were mostly flat so we fishing in the ocean until dark riding the 3 & 4' swells. The occasional barge or Navy ship gave us a few good rides where we had to hold on tight

    cant beat 80 degree weather in December

    When we camp for duck hunting on the island we walk the rocky shoreline with crab tongs and pull out Stone Crabs and boil them up in camp, sweet juicy claws them things have and can't get any more fresh than that. We catch tons of blues too but not much meat and PITA to get to it. One time we pulled up a trap and had a damn big blue and a good Stone in there, dumped them out into the net and the Stone grabbed the Blue's claw and crushed it like an egg then ripped it's arm off.

    People here are idiots. How the hell much bread, milk and toilet paper are you gonna use in a day or 2? I mean, we're not talking about a blizzard where you might be stranded for a few days. I just don't understand.

    Found my two favorite soft plastics on clearance and bought 26 bags of them, Hackberry Hustler, Saltwater Assasin Seashad, and Norton Sand Shad Jr. While I was there I noticed these nice looking Mullet lures, one topwater and one fast sink.

    Should be a good spot, but the bounties on a lot of these West Texas counties have pretty much wiped them out. I hunted a private ranch around 2007 season or so, one of the neighboring ranches reported seeing a coyote and a government chopper worked the area for over a week straight until they killed 3 and determined they were all gone.

    There are quite a few, and the hogs somehow haven't made it out there yet as far as I can tell.     LOL... My wife just came home with 2 month's worth of toilet paper... Because as she said "We're running low" (We only had around 2 months left!)

    I am down to 120 gallons of fuel oil in the back up furnace, so I would have rather put that money in the kitty to restock the tank.

    In theory yes... But I have a multi source system... And I'd be a little worried that different temps might damage the plenum that the electric uses as well.

    I don't know enough about it to want to risk trying something like that unless I had to.
