Thank you guys.
I’ll be 44 in a couple of months.
My blood pressure started to creep up as my weight went up. At one point it was like 140+ over 90. They put me on a diuretic which I still take.
At my last checkup a few weeks ago, the Dr said it’s time to start tapering off of it because I’m usually in the 110-120/65-75 range, and sometimes lower, especially at night.

I spent some time researching this because I eat a lot of rice.
For starters, Jasmine rice is lower than other types of enriched white rice from certain parts of the world. That’s why I use Jasmine.
Second, rinsing it 10 to 40% (off the top of my head - I read those studies months ago) of the arsenic on top of that, and I rinse mine very carefully every day prior to cooking.
Also, brown rice has higher levels of white if I remember correct correctly because the fiber holds the arsenic in.
Anyway, if you make a few specific choices with it, you can minimize the arsenic exposure.
I eat a pretty ridiculous amount of rice compared to most people, and I’m not dead yet.

Also, it looks like steaming kale reduces oxalic acid. And I do steam it every day. It doesn’t reduce it as much as boiling, so that’s something I would consider I guess at some point. Right now, the steaming is just far more efficient with my time. And I’ve got my daily meal preparation down to the minimum amount of time by making an assembly line out of it.

Thank you.
I mean, I guess part of me wishes I could just eat normally like everybody else. But I just had to come to grips with the fact that it's not in the cards for me. One way or another, this is my permanent lot in life. Which I only mention that because you asked... it's not like I walk around feeling like a prisoner. There is also freedom in that routine.Last edited by DrewDarden; 05-23-2024 at 07:19 AM.

Great job Drew! I bet you feel sooo much better with so much weight off. People make fun of me all the time for eating the same thing all work week. It doesn't bother me though and it works for me. It also makes life easy on work days to not have to worry about what I'm going to eat each day. Like you said it's kind of freeing.
