Nashville Hot Chicken Tenders
Ingredients:
10 boneless skinless chicken tenders
2/3 cup buttermilk
1 egg
1 1/2 teaspoons, plus 3 teaspoons cayenne pepper, divided
1/2 teaspoon smoked paprika
2 tablespoons Sriracha sauce
3 cups panko breadcrumbs
4 tablespoons coconut oil
2 teaspoons honey
Directions:
In a large bowl, combine buttermilk, egg, cayenne pepper, and smoked paprika with a whisk. Add chicken to the buttermilk mixture and flip to cover. Place in refrigerator for a couple hours to marinate.
Preheat oven to 400˚F.
Pour panko breadcrumbs into a bowl. Remove chicken from buttermilk mixture being careful to allow excess buttermilk to drip off and roll in breadcrumbs. Place baking sheet in oven and bake chicken for 10 minutes then flip and bake another 10 minutes or until done.
While the chicken is baking prepare the glaze by adding coconut oil, Sriracha, 3 tsp cayenne pepper and honey in a saucepan. Cook for 5 minutes over medium heat while whisking to combine. Paint glaze onto chicken with a pastry brush. Make sure to do both sides! Serves 4 normal people and two hot chicken lovers at my house.
