I love going to the gym and working out. Love the feeling of being sore and feeling like I did something the next day. But for some reason, I just can't stick to a diet, or a change in eating at all to lose the 60+lbs I need to lose. Any tips to stay motivated to eat right?

Gotcha. Congrats man.
I dunno what it is. I feel like ive been trying harder since January this year, harder than I ever have at pretty much anything in my short life so far, but I still cant seem to get over the hump still. I guess the plus is that Im technically down 4lbs this year, instead of gaining weight like I have every year up to this year? I dunno, I get really depressed when I look back and realize if I kept with it, since January, I could realistically be down 40lbs or more and starting to get close to goal weight.

It's not easy, but it is doable. I'm down 54 pounds with a few more to go. It's been a long journey with lots of struggles. Set small goals, like ten pound increments. Continually work on your nutrition and look for ways you can do it better. Look for foods that aren't calorie dense so you can feel more full.
Also don't beat yourself up when you mess up. Pick yourself up and keep moving forward.

Good suggestion itt so far. Just gotta accept that sometimes you’ll be hungry or you’ll hafta eat that can of tuna rather than a bag of chips.
Just stay on it, consistency is key so stick w something that works for u. Not having junk around the house is a big start.
If it was easy errbody would be shredded!

Everyone has good advice here, except obviously the troll.
What do you think is holding you back? Some people (like me) feel like they need to eat until full-ness, while others feel like they need a specific taste, or some just graze because they have tasty snacks in their home available to them (because of kids, or spouses, or whatever). Or maybe something in your routine is setting you up for failure? Like do you have to order out for lunch at work or maybe you go out with friend too many times per week? I don't know, so I'm just asking. Try to be hyper aware of how your thinking leads to overeating or try to see if your thought process is sabotaging your success.
I made really small changes over a long period of time to lose 31ish pounds. First, started cooking meals at home. Then cut out added sugar. Eventually cut down on the alcohol, etc.
Motivation wise, I just remind myself of how much better I feel when I eat healthy, whole foods as opposed to junk that makes me want to nap. Try to find another reward in the process that isn't based on the scale, maybe. Like "I do this because I feel better when I do" or "because I have more energy when I eat this way."ACE--certified PT.

I have a healthy appetite, so it's a struggle for me to stick to a deficit long term too...a couple things that help me: 1) distraction/keeping busy with other stuff so you're not thinking about eating; and 2) find low calorie foods you enjoy, so you can feel satisfied while still keeping to your deficit.
If you are smart about your diet and plan ahead, you can still incorporate small amounts of anything you want. You could have 2 slices of pizza every day, you'd just have to tailor the rest of your day to allow for it. Once you understand calorie tracking and get an idea of your TDEE, you have a lot of freedom with what to eat.
The only thing is - no more just eating whatever you want carefree. That is the one thing that you have to stop. Know what you're eating and take control of your diet. After doing this for a few weeks and seeing results, you will be motivated to keep going.

Pick one:
1-You're satisfied with the way you look/feel and will stay that way.
2-You're unsatisfied with the way you look/feel, and will change it even though it won't be easy, and will require daily effort, but you think you're worth it.
3-You're unsatisfied with the way you look/feel, but not enough to get out of your comfort zone to make the changes you want, as it's just too hard.64

It all comes down to discipline. Motivation is fleeting. Willpower is a stupid made up term. You need to stay disciplined if you want to reach your goals.
Find foods you enjoy that fit your macro/calorie needs.
I've officially lost 100 pounds as of this morning. Has it been easy? NOPE. But I wouldn't change a thing.
