Relatively high carbohydrate intake is contraindicated with certain disorders, especially those associated with dysregulated glucose metabolism.
For those so afflicted, a low carbohydrate diet, particularly a properly formulated ketogenic diet, can have therapeutic value.
For everyone else, it's largely a function of personal preference.

I haven't watched this guys video but I've read his book. I think he is saying that quality of grains has decreased over the last years and we shouldn't consume them, but he's not against vegetables etc. But I guess he generally is against carbs. What he says might work for some people, it depends on your body. Some people feel good when eating mostly fats, some with mostly carbs etc, you have to discover which macro set makes your body function most effectively. But it's not really that you shouldn't eat carbs at all or that you should minimize them.

So I guess you'd need to monitor blood sugar to see where you were really at..?
Speaking for myself, my own problems with reactive hypoglycemia were relatively minor and don't resurface except in unusual circumstances: e.g. being in an excessive calorie defecit - and then drinking alcohol on an empty stomach - pretty dumb I know. But I am pretty happy with a moderate carb intake now. But it would be interesting to know if I could improve matters further with another spell of Keto.

Basically one would have to monitor for relapse.
The earlier the intervention, the more likely complete remission without the need for any specialized diet interventions.
That said, it would be interesting to see if you can achieve a better level of "recovery" with a prolonged trial of a ketogenic diet.

To add though, some people enjoy/preferhigh amounts of carbs in their diet due to physical activity (marathon runners) since it is the cheapest food source of energy tbf.
Although, it has been discussed and reviewed..carbs are non-essential...
