How many times per week should I be doing squats if I want to build muscle mass?

I do it twice a week, because I like to allow at least 2 full days of rest before I hit legs again- so I work them every third or fourth day. But some people advocate that 48 hrs is all you need before you work the same muscle group, which would give you 3 times a week.

once a week
10 sets of squats (sometimes 10 sets back squats..sometimes 5 front 5 back)
if i train right i will be in mild pain for 2-3 days and have sore hamstrings and calves.
if i feel ready to hit the muscle agiain after 3 days i feel i have not hit them hard enough.Natural Physique Ascossiation South East Britain lightweight champion

Depends on how fast you heal on up and how hard you are pushing yourself. Lately I have been going crazy on leg day and cant hit them again for another 4-5 days. If you feel up for it, just go and head hit them again.

I squat once a week, 3 x 8 currently, nice and heavy. Stop right before failing (or increase weight on progressive sets) currently use 290lbs
Followed by 3 sets of lunges, (3 x 8) with nice heavy DB's, use 62.5lbs currently
Since I am not flex enough to go ATG on squats, I usually do a set or 3 of weighted sissy squats. Plate of 25lbs on the chest.
My quads are dead after this and I take a week to recover. My strength is not increasing really really fast, but it is going up steady. So is the size.
I am thinking of squatting twice a week, but need to wait till after my keto cycle.

3x will lead to overtraining? You should call up Rippetoe and inform him of his folly.
Front squat is more biased towards quads.
