Add mushrooms to that. You'll love it.

To add mushrooms fry them separately. Once they're good (Mushrooms + onions) prepare the cheese and put them in with the cheese. Really good.

I've made something similar, using provolone cheese and using thyme to spice it. Also made an egg batter and dipped the bread in the batter and made it like a normal grilled cheese. Gotta find the recipe. Looks awesome cyde!
