Molten Chocolate Cake(Keto Variation) modified from jean-george vongerichten recipe.
4 servings
4 oz of butter plus more to butter the molds
2 ounces cocoa powder
2 eggs
2 egg yolks
1 oz of heavy whipping cream
2 oz of splenda(or to taste)
1 oz whey protein
1)In the top of a double boiler set over simmering water, While that's heating, beat together the eggs, yolks, splenda, butter, and cocoa powder with a whisk or electric beater until light and thick.
2) carefully fold the protein powder( be careful of not losing too much air as it lose its airyness)
3)butter the molds first, and pour the mixture into several molds
4) back at 450 f over for 6-7 minutes if its a small mold, longer if its a larger mold. the outside should be cooked but the inside should be still liquid.
5) let it cool for 10 minutes, invert it onto a plate and enjoy the oozing center.
