Anything from Jazz guitarist Ron Jarzombek. One of the most innovative guitar players in prog music, and for any prog fans out there you know that a lot of prog is for virtuoso's. Check out his band Watchtower or Spastic Ink. Listen to some of those guitar lines.
Also anything from Alex Skolnick (Testament)
JEFF LOOOOOOMIS (Nevermore) The man is a beast. Listen to the solo from Tomorrow Turned into Yesterday & Ambivalent or check out the rhythms to any of his music.
Guitar work from Racer X?
Much MUCH MUCH more

He actually has a newer band called Blotted Science. DEFINITELY check that out because it is made up of Alex Webster (Cannibal Corpse, bass player from hell), Charlie Zeleny (drummer from Behold the Arctopus), and of course Ron himself. The band included past members such as Chris Adler (LOG) and Derek Roddy (Hate Eternal...one of my personal fav drummers).
As far as his work in Spastic Ink, I would say that you can't go wrong with either one. Everyone has different preferences, but in my opinion I can't really say I prefer one over the other. They both, well, in lamen's terms: SHRED

I play all sorts of guitar genres, from rock, jazz, blues to classical. Mostly I just mix it all and see what happens. But when I really want to challenge myself I turn to classical guitar. I consider that the most demanding and challenging guitar music.
It's not exactly what I'd prefer listening to when I'm at the gym, but nothing blows your audience away when someone give you a guitar and expect you to play a few chords, and you give them a proper classical piece. Like this one, not the most challenging, but it's a must know: http://www.youtube.com/watch?v=wDAHl54V0CU

Bark at the moon and Iron man seem like they'd be pretty hard. I don't know, I decided to pick up guitar tonight and the first song I'm working on is John the Fisherman by Primus. Once my fingers get callused so I can practice longer, I want to learn a difficult classic rock song as fast as possible by practicing for like four hours a day or something so I can bust it out for my guitar playing friends without them ever knowing I started playing, lol. How hard is stairway?
