Bartie Musa - I think when it comes to volume for naturals you should go for consistency and non-injury training 12 months a year 10 years straight vs 8 months a year for 7 or 8 inconsistent years will have a huge impact. So I am of the sustainability yet muscular stimuli camp. What that balance is for you however is part of the journey. If you're working so hard you're breaking down tissue faster than you can build it, it is likely not sustainable. Conversely if you're barely doing anything you won't reach enough muscle stimulation.

6-9 hard work sets per week seems my sweet spot. However, I also do what I call work capacity workouts where I'll do something like 20 sets of 5 with kettlebells or barbell, not crazy heavy just lots of volume. This always seems to have a positive effect for me and a nice change of pace. I would NOT however base my training on this methodology as it seems to be a nice change of pace but not something that builds strength or muscle as quickly.
