I’m fine, working on either solidifying a spot for my kitchen guys or providing a severance package for people. Some of my guys have been with me almost 6 years.

Was doing 4 dollar tiny brgrs (size of McDonald’s cheeseburger but smaller bun and special sauce)

8 dollar double smash burgers

12 dollar double smash specials

14 6oz wood fire basic (meat cheese onion pickle sauce)

16 6oz wood fire with fixings

And a range of 18-24 burgers and about 7 salads.

Also been doing seasonal soup/grilled cheese


But location is chit other than beautiful view, out of the way for people to get here. Real estate is the most important thing in this industry and I was to much of a cocky chit who thought I could do something special that would get people to drive out of their way etc..

The dinner concept is no gas range and a big shelf with only natural wood burning in various spots. And diners still do well in the market I’m in regardless. But limited menu and seating + low staff and low overhead and small menu + unique draw in a decent location still seems like a solid plan to me.

Yeah I ran a food truck in Portland like 15 years ago. Idk I hate not having plumbing.

I mean it seems like you are providing an experience with what you detailed. If you’re really passionate about it, I would say go for it but know that most restaurants fail but don’t let that discourage you.

Damn, you have the right attitude though. You're identifying why it failed. The photos you shared looked like a place I'd chill at, but location is definitely huge.
