They already have some sort of emulation for some GameCube games, Mario sunshine on super mario 3D all stars was emulated and 1080p (yet still unfortunately 30fps)

And I love windwaker a ton, but I’d prefer the Wii U version over GameCube emulation, it was so pretty

I don't think they'd show up in Switch Online, they would probably get the Metroid Prime Remastered treatment or Mario 3D All Stars treatment. They're too big and sophisticated for that online app approach.

Could you imagine Zelda ocarina of time with modern day graphics maybe on a Switch 2 who people assume would be on par with an Xbox one/PS4. Or even a complete remake on the current switch would be a huge step up.

I didn't finish yet. I liked everything BUT the combat, just like the last one, sticker star. The world and humor are always nice and cozy, but I vastly prefer the combat in the first two games.

GC sucked back in the day. The Zelda's and Mario were weaker than their N64 predecessors, and the more mature games skipped the console.

NSO is a joke. They can't even manage to get it together to make N64 controllers readily available, and they take months just to make a couple of old roms available on their apps. I honestly think they are just incompetent and incapable by this point, so there is no way I am going to expect them to do anything impressive. Heck even if they somehow managed to get a Gamecube app, they would probably only sell about 100 controllers at a time for it and have them out of stock for months on end. You would also be lucky to get more than 5 game drops over the course of an entire year. They just suck now a days, srs.
