Tbh 'boring wrestlers' is really a meme. When you get two really good wrestlers against each other in the UFC, they usually cancel out each other's wrestling and it turns into a slugfest.
The issue is when a good wrestler fights a guy who never bothered to learn how to wrestle and is content to just hang on and try to make it to a decision without getting finished.
Kenny Florian is a good example of a guy who never had the wrestling skill to stop good wrestlers but found a way to make wrestlers pay for taking him down. He would just open them up with elbows from his back.
Guys who just lie there and wait for the ref to help them are the problem. And they do that because they know if they try to get up they are going to eat punches and maybe get submitted. Typically those guys are to blame for boring fights with wrestlers.
Also the unified rules of MMA are a big part of it. Go watch early Mark Coleman or Kevin Randleman fights to see what happens when a good wrestler isn't constrained by stupid rules. Can openers, headbutts, knees to the head. All great tools for wrestlers that got taken away by beaurocrats.

There's way more boring than Edgar and Holloway. GSP, as good as he was, did the "lay and pray" for a huge portion of his run. Usman did it, too, for a while up until recently.

Frankie Edgar has been my favorite fighter for well over a decade, and he's had some of the most exciting/memorable fights in UFC/MMA history. But some of his more recent fights weren't as exciting.
