I want to adopt this lifestyle for the health benefits, or having a feeding window of 8 hours at most, but the problem is I'm an ectomorph and struggle terribly to gain weight.

I don't think this is something you'd want to do if you were someone that wanted to gain weight. It's more of a calorie restriction tool - a way to lose weight.
If you're having trouble gaining weight, this means you're not eating enough. Since you're not eating enough, you're basically fasting so you're already really getting the health benefits you are looking for from intermittent fasting/"one meal a day" without even realizing it.

I like this guy. He is skinny because he doesn’t eat enough. Probably because he gets full fast. So he wants to make it 100x harder to gain weight by getting in all of his calories in one meal. Challenge accepted.

I like how people here are assuming I don't eat enough like they know me. I always eat three times a day or more with plenty of veggies and meat, but it's proven to increase disease risk and reduce life expectancy, that's why I want to stop. That said, I don't want to get any thinner either and have seen people be able to maintain their weight even with intermittent fasting.

you may eat enough food to satisfy hunger, but clearly not enough food (calories) to gain weight. so, how many calories are you eating per day?
anyway i wish you good luck for doing one meal a day when you're skinny to begin with, hope you don't find any "proven" articles about skinny people having increased disease risk and reduced life expectancy, or any other negative things from one of your lifestyle choices that you now have to change in hopes of living longer while staying healthy
don't get me wrong, living long and staying healthy is important, but it's not like eating like a normal person (3-5 times per day for example) will make you prone to disease and dying early, that sounds like total bs. if you want to live a healthy and long life, the amount of meals you eat in a day is damn irrelevant in the grand scheme of things. i can guarantee you that there are a thousand more useful things you could do to mitigate those risks, especially since you want to gain weight and intermittent fasting makes it harder for you

I wouldn't rely too much on documentaries. Most of them have something to sell.
If you want to gain weight, you need to eat more. If you aren't gaining weight, then you're not eating enough. If you reduce yourself down to one meal, unless you gorge yourself like a tick you likely will not get in enough calories.
Eating to gain is harder than strength training in many cases.
If you wanna be the man, you gotta out-eat the man.

You're right, the only thing we know about you is that you consider yourself to be an "ectomorph" - which is all we need to know.
Explaining to an "ectomorph" the obvious reasons why this is so, always ends up being a circular conversation. "Hey I'm super skinny & want to gain weight, maybe I should only eat once a day or do IF. I heard I'll live longer & won't get diseases."

I wouldn’t call it healthy but it shows if you are serious about gaining weight you need to get serious about eating. JM Blakley confirms he did do this back in the day, especially doing those insane weight jumps from 198 to 275.
