I don't know what you like eating or when it's convenient for you to eat, my point is that you can be a lot more flexible - and probably need to be if you are going to stick to it long term. Things that matter are total calories and getting enough protein and dietary fat, vitamins and minerals.
Experiment with putting different things into an app like cronometer.com and see how they add up.
