I m 85.2 kg (187-188 lbs), 181-2 cm(5-11-6ft) 22 yo male. I m used to losing weight pretty fast and also gaining it fast. Last year i made a cut from around 87kg to 78 and hit plateu. I ve started with 1500 cal intake and kept it like that until plateu, then i bulked up 2 kgs before stoping with training and ended up gaining 5 kg back. I do push pull workouts and barely any cardio. My new goal is to hit 74-75 kg and i m wondering is it better to start with large cal deficit(1500 cal 1000 cal def) or should i start with 500 and make it larger as i progress, also what is your best advice to not gain all the weight back?

Starting with 500 deficit and going down more if needed is probably the safest bet.
Eat foods you actually enjoy. Any foods that are on your diet that you don't enjoy, avoid them. If you feel deprived or restricted on a "diet", that may cause you to have cheat days or go back to old habits. The same goes with exercise; have a routine of exercises you enjoy.
Eat a variety of foods. Don't limit yourself to the same few foods over and over.
