Nothing like cooking with FIRE. Pizza oven cooks lots more than pizza. Little family dinner. Roasted two whole chickens and a rack of baby backs.

I have yet to try spatchcocking. Do you feel like it cooks the bird more evenly? I want to try it with a turkey on a gill (for thanksgiving) since the surface area will be too large for a standard oven.

I leave the bones in. I just cut the whole birds down the middle and coat with olive oil and season. They go right into a few oven safe pans and I cook with high smoke for a few hours at about 200-225. I take out when breast hits 160.

I love cooking with wood. Combination of how big you make fire and placement. It is just something I put some music on, and hang out for about 3 hours while it cooks. Setting the fire and then checking on ever 30 min and adjusting. In between I lay on a raft and hang with the puppies in the pool. Not a bad way to spend the afternoon.

Frenchies, not pugs and they both can swim, and know the pool pretty well. When we built the pool there is the big ledge on which they are standing that is only about 6" deep for them to swim back to. They both love the water!

That is the cutest little one. SO much fun and they have brought so much to our lives. We have 2-frenchies. Maggie is 3 and Izzy just turned one. Maggie is loving but aloof. She will take a little affection and then be like 'I have had enough'. Izzy would be perfectly happy to be in your arms all day long. So cute and just remember how fast they grow up! Take lots of pics!

There is no point in cooking chicken when cooked rotisserie chicken costs less than a raw one.

Smoked chicken cooked in wood fired oven is 10x better than rotisserie chicken.

Just saying....
