Why should you slowly increase calories when transitioning from cut to bulk?

I'm starting a bulk after a long cut and plan on eating a surplus of 300-500 calories. I was reading through older posts and saw a lot of comments saying that you should slowly increase cals by 200 every week.

I was thinking I could just eat around maintenance for a couple weeks and then increase cals by 200 a week until I'm gaining 1lb a week.

    OR

Should I just start with a 500 calorie surplus?

I would ditch the idea of a bulk with a 500 calorie surplus. Half of that would be better - unless your goal of a bulk is to gain more fat than muscle.

In the same way you don't floor the pedal when you accelerate, a moderate approach is better in finding your "speed".

I eat at maint for 2 weeks, then increase by 200 for 2 weeks, then another 200 if needed to gain .5 lbs per week.
The problem with going too much too soon is you want your weight gain to be very slow and controlled; this will help keep fat gain to a minimum.

I take the square root of my BMR multiplied by my goal weight, then I subtract 100 for each chick I hooked up with in college, then I add 200 every week after accounting for the shift in the Earth's axis....

If I don't do this, I become fat overnight and hate the world.

    it's that serious.
